Fettuccine, also referred to as "Tagliatelle", is a flat noodle about 3/8 inch wide, and is great with a variety of sauces. Our recommendation is Assenti's Homemade Pesto Sauce. A classic recipe for Fettuccine is Fettucine Alfredo.
Fettuccine Alfredo
Ingredients
8 oz. heavy cream
3 oz. butter
8 oz. grated Parmigiano Reggiano
pinch of black pepper
Directions
Melt butter. Add heavy cream, warm slowly, do not bring to a boil. Remove from heat add all of the grated cheese stir well. Boil 1 lb. of fresh Fettuccine in 4 to 5 quarts of salted boiling water for 2 to 3 minutes. (do not over cook). Drain the pasta. Add to pot with Alfredo mixture to coat evenly.
Remove to a serving bowl.
Add black pepper. Garnish with fresh chopped parsley. Top with grated Parmigiano Reggiano cheese. Serve immediately.
